We were encouraged by our wholesale dealer to make it big in Tokyo, and we established \u201cFujiki Shuten\u201d in Ginza. Since then we have run a traditional liquor shop that carries not only alcohol but also soy sauce and miso. <\/dd>\n<dt>Takashima <\/dt>\n<dd>(looking at a photo from the Showa 30s (around 1955)) This looks like a scene from Sazae-san (a long-running Japanese cartoon). Is the current chic store a recent introduction? <\/dd>\n<dt>Fujiki <\/dt>\n<dd>When we rebuilt our main office building in 2010, we opened the \u201cGinza Cave Fujiki\u201d as a store specializing in wines. I have been very devoted to learning about wines and even joined a wine and spirits manufacturer after being graduated from university. I also wanted to contribute to bringing joy to the dinner table. Do you drink alcohol? <\/dd>\n<dt>Takashima<\/dt>\n<dd>Actually, I can\u2019t drink much by nature (laughs). But when I get together with my children\u2019s friends\u2019 mothers, everyone else enjoys drinking from the middle of the day. What kind of wines do you carry? <\/dd>\n<dt>Fujiki<\/dt>\n<dd>Natural wines. They are what is called \u201cshizenha wine\u201d in Japanese. <\/dd>\n<dt>Takashima<\/dt>\n<dd>Uh, I had thought that all wines were natural. <\/dd>\n<dt>Fujiki<\/dt>\n<dd>My guess is that you believe that wine is made from grapes that are harvested, then crushed by stomping on them and put in barrels for fermentation. However, most wines are no longer made that way today. Human interference is required here and there to produce fine wine every year. <\/dd>\n<dt>Takashima<\/dt>\n<dd>For a balanced flavor? <\/dd>\n<dt>Fujiki<\/dt>\n<dd>Yes, but we choose to carry wines have been made the traditional way, as I explained before. <\/dd>\n<dt>Takashima <\/dt>\n<dd>So, do your wines taste different from bottle to bottle? <\/dd>\n<dt>Fujiki <\/dt>\n<dd>Yes. Sometimes a label that was sweet last year can be dry this year. <br \/>\nNatural wines are fundamentally made from organically grown grapes, so various factors contribute to changing the taste. It\u2019s natural!\u201d!?<\/h4>\n<dl>\n<dt>Takashima<\/dt>\n<dd>Your store hosts interesting events, such as \u201cA picnic for adults\u201d and \u201cCome on everybody! It\u2019s natural!\u201d Can you tell me what they are about? <\/dd>\n<dt>Fujiki <\/dt>\n<dd>We launched these events with the hope of introducing the wonderful taste of natural wine to a wider audience. We invite vegetable producers to \u201cA picnic for adults\u201d and offer vegetables and cheese, of course, to our customers so that they may enjoy good pairing of food and wine. <\/dd>\n<dt>Takashima<\/dt>\n<dd>How stylish! What about \u201cCome on everybody! It\u2019s natural!\u201d? <\/dd>\n<dt>Fujiki<\/dt>\n<dd>For that event, we have our importers bring in their best wines and we just have everyone taste them. We usually have a variety of thirty to forty different wines. <\/dd>\n<dt>Takashima <\/dt>\n<dd>Really! That sounds fascinating. Do you plan to host any new events in the future? <\/dd>\n<dt>Fujiki <\/dt>\n<dd>Those are the two that we have hosted as a series. We do have plans to do something special when the Beaujolais Nouveau is released in November. It\u2019s natural!\u201d<\/p>\n<\/div>\n<\/div>\n<p><!--nextpage--><\/p>\n<div class=\"columnbox\">\n<h4>Special sweets from well-established store in Ginza can be enjoye d at \u201cGinchakai\u201d. <\/p>\n<dl>\n<dt>Takashima<\/dt>\n<dd>Speaking of autumn in Ginza, I have been told that you play an important role in the town-wide \u201cGinchakai\u201d event. <\/dd>\n<dt>Fujiki<\/dt>\n<dd>Yes. The event is celebrating its 15th year this year and I have been a part of it since its beginning. I have assumed a leadership role these past three years. <\/dd>\n<dt>Takashima<\/dt>\n<dd>What do you do at \u201cGinchakai\u201d?<\/dd>\n<dt>Fujiki<\/dt>\n<dd>With Ginza-dori the main venue, all the streets in Ginza host nodate (open-air tea ceremony). The five major schools of tea ceremony and the Sencha school, which usually do not share a ceremony, come together for the event. A tea ceremony designed by architecture students is also held. The entire town is activated. <\/dd>\n<dt>Takashima<\/dt>\n<dd>It must receive many participants every year. <\/dd>\n<dt>Fujiki<\/dt>\n<dd>In recent years, we have enjoyed the participation of around 5,000 people. Some people come in their kimonos and we have more foreign tourists returning to their countries with photos that they took of the procedures for making tea. <\/dd>\n<dt>Takashima<\/dt>\n<dd>Do you have to book beforehand to participate? <\/dd>\n<dt>Fujiki<\/dt>\n<dd>No, visitors are welcomed on a first-come, first-served basis. <\/dd>\n<dt>Takashima<\/dt>\n<dd>And yet you receive 5,000 participants! That is amazing.<\/dd>\n<dt>Fujiki <\/dt>\n<dd>We are very thankful. I am sure that our participants go home in satisfaction because they enjoy not only tea, but also sweets specially prepared for the occasion by well-established shops in Ginza. <\/dd>\n<\/dl>\n<\/div>\n<div class=\"columnbox clearFix\">\n<div class=\"photoleft\"><img decoding=\"async\" src=\"\/wp-content\/uploads\/Connect_59_08.jpg\" alt=\"\" \/>\n<\/div>\n<div class=\"photoright\"><img decoding=\"async\" src=\"\/wp-content\/uploads\/Connect_59_09.jpg\" alt=\"\u9280\u8336\u4f1a\u3000\u9280\u5ea7\u304c\u91ce\u70b9\u306e\u4f1a\u5834\u306b\" \/><\/p>\n<p class=\"note mab30\">Ginchakai: Ginza becomes the venue for an open-air tea ceremony <\/p>\n<\/div>\n<\/div>\n<div class=\"columnbox clearFix\">\n<h4>Ginza features team work through new discoveries based on old lessons <\/h4>\n<div class=\"columnboxleft\">\n<dl>\n<dt>Takashima<\/dt>\n<dd>How many years has it been since you first came to work in Ginza? <\/dd>\n<dt>Fujiki<\/dt>\n<dd>It has been almost 25 years. <\/dd>\n<dt>Takashima <\/dt>\n<dd>What do you think of Ginza today? <\/dd>\n<dt>Fujiki <\/dt>\n<dd>I have watched this town from my childhood and the town itself is constantly changing. On the other hand, returning to this town as an adult, I have realized that there are still many aspects that remind me of an old traditional neighborhood. <\/dd>\n<dt>Takashima<\/dt>\n<dd>Do you mean in terms of human networks? <\/dd>\n<dt>Fujiki<\/dt>\n<dd>Yes. I strongly feel that Ginza is defined by the people who support it. The infrastructure has indeed changed, but it is home to a fusion of newcomers and people who have been here for a long time. Our relationship is the kind where you tell your next door neighbor that he should take his laundry in because it has started to rain. It may be difficult to recognize from the outside, but the kind of teamwork that we would find in an old neighborhood still prevails and continues to be a feature of Ginza\u2019s identity. <\/dd>\n<dt>Takashima<\/dt>\n<dd>Indeed, the network across business owners on commercial streets is particularly strong. <\/dd>\n<dt>Fujiki<\/dt>\n<dd>Yes. We don\u2019t just gather amongst old members but are open to new perspectives that become the drivers of further evolution. <\/dd>\n<dt>Takashima <\/dt>\n<dd>It is wonderful that you are not exclusive. <\/dd>\n<dt>Fujiki <\/dt>\n<dd>That is true. That is why people working in Ginza love Ginza. Takashima started taking violin lessons from the age of 6. After a successful career abroad, she moved her home base to Japan, where she currently performs in concerts across the country. Highly noted for her character in TV and radio appearances, she has currently opened up her career to more diverse fields with an unchanged focus on her profession <\/p>\n<p><a href=\"http:\/\/www.takashimachisako.jp\/\" target=\"_blank\">Chisako Takashima official website <\/a>\n<\/div>\n<div class=\"profiletext\">\n<h4>Toru Fujiki <\/h4>\n<p class=\"text\">CEO of Ginza Cave Fujiki. Born in 1964, Fujiki joined Suntory after being graduated from Meiji University. He joined Fujiki Shuten Ltd. in 1992 and assumed the position of CEO in 2004. He opened Ginza Cave Fujiki in 2010. He enjoys spending time in his kitchen garden where he grows tomatoes and cucumbers on weekends.
