What inspired you to open this type of caf\u00e9? <\/li>\n<li class=\"answer\">This building was originally home to the printing factory of a printing house run by my great-grandfather, When I was 23 years old, teaching social studies at a junior high school, my father who had been the third president of the company, passed away. I took over the company for a while but with the printing industry facing challenging times, I closed the business after a few years. I decided to open a caf\u00e9, which was something that I had always wanted to do.\n<p>My experiences working in Ginza made me eager to offer healthy lunches made from fresh seasonal vegetables regardless of the time of day. <\/p>\n<p>This area is home to many publishing companies and working people don\u2019t always have a fixed lunchtime. However, from my experience, restaurants that serve dinner tend to close after being open for lunch so there were few options left after lunch hour. <\/p>\n<p>Therefore, my idea was to keep my restaurant open until the evening and to serve lunch until we closed. Since lunch is something that we eat every day, I wanted to serve meals that resembled the lunchbox that you would bring from home \u2013 something not heavy and welcome every day.\n<\/li>\n<\/ul>\n<\/div>\n<div class=\"csrboxright\">\n<div class=\"photobox\">\n<img decoding=\"async\" src=\"\/wp-content\/uploads\/Csr_27_01.jpg\" \/>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"photobox2 clearFix\">\n<div class=\"photoleft\"><img decoding=\"async\" src=\"\/wp-content\/uploads\/Csr_27_02.jpg\" alt=\"\u5927\u6b63\u6642\u4ee3\u304b\u3089\u7d9a\u304f\u5370\u5237\u5de5\u623f\u306e\u3042\u3063\u305f\u96d1\u5c45\u30d3\u30eb\u3092\u30012013\u5e74\u306b\u73fe\u5728\u306e\u59ff\u306b\u30ea\u30cb\u30e5\u30fc\u30a2\u30eb\u3057\u305f\u3002\u5929\u4e95\u304c\u9ad8\u304f\u3001\u3086\u3063\u305f\u308a\u3068\u3057\u305f\u9593\u5408\u3044\u306e\u3053\u3053\u3061\u3088\u3044\u30b9\u30da\u30fc\u30b9\u304c\u5e83\u304c\u3063\u3066\u3044\u308b\" \/><\/p>\n<p class=\"note\">The multi-tenant building that used to house a printing factory continuing from the Taisho period was renovated in 2013.<br class=\"pc\">A spacious and comfortable room spreads under a high ceiling. <\/p>\n<\/div>\n<div class=\"photoright\"><img decoding=\"async\" src=\"\/wp-content\/uploads\/Csr_27_03.jpg\" alt=\"\u5e97\u306e\u5165\u308a\u53e3\u53f3\u624b\u306e\u58c1\u306b\u306f\u3001\u624b\u66f8\u304d\u306e\u30e1\u30c3\u30bb\u30fc\u30b8\u3067\u60f3\u3044\u304c\u7db4\u3089\u308c\u3066\u3044\u308b\" \/><\/p>\n<p class=\"note\">A heartfelt message is hand-written on the wall to the right of the entrance. <\/p>\n<\/div>\n<\/div>\n<div class=\"csrbox\">\n<ul>\n<li class=\"question\">\u2500Serving a different healthy and affordable lunch day after day, you must cook a wide variety of ingredients. How do you purchase your ingredients? <\/li>\n<li class=\"answer\">I have the vegetables that we use sent directly from an organic farmer in Inzai City, Chiba Prefecture who produces a wide variety of vegetables in small quantities. Since we are a small establishment, it is perfect that we can purchase different varieties in small lots from a single farmer. I aim to use a total of 40-50 varieties through the year and have our customers savor each season. We offer meals with meat and without meat so that our customers can choose according to their daily condition.\n<p>The coffee that we currently serve is from Single Origin Roasters based in Australia. We want to serve what we can say is tasty with confidence and we lay much importance upon continuing our search for good quality in both coffee and food.\n<\/li>\n<\/ul>\n<\/div>\n<div class=\"photobox2 clearFix\">\n<div class=\"photoleft\"><img decoding=\"async\" src=\"\/wp-content\/uploads\/Csr_27_04.jpg\" alt=\"\u65e5\u66ff\u308f\u308a\u306e\u30e9\u30f3\u30c1\u30e1\u30cb\u30e5\u30fc\u306f\u3001\u597d\u304d\u306a\u4e3b\u83dc\u3068\u526f\u83dc\u3092\u7d44\u307f\u5408\u308f\u305b\u3092\u697d\u3057\u3080\u3053\u3068\u304c\u3067\u304d\u308b\u3002\u3054\u98ef\u306e\u4ee3\u308f\u308a\u306b\u81ea\u5bb6\u88fd\u306e\u30d9\u30fc\u30b0\u30eb\u3068\u3044\u3046\u30c1\u30e7\u30a4\u30b9\u3082\u3002\u9031\u306b\u4f55\u5ea6\u3082\u901a\u3046\u5e38\u9023\u5ba2\u3082\u591a\u3044\" \/><\/p>\n<p class=\"note\">The daily lunch special is a combination of a main dish and side dish of your choice. <br class=\"pc\">Homemade bagels are also available instead of rice. Repeat customers come several times a week. <\/p>\n<\/div>\n<div class=\"photoright\"><img decoding=\"async\" src=\"\/wp-content\/uploads\/Csr_27_05.jpg\" \/>\n<\/div>\n<\/div>\n<div class=\"csrbox\">\n<h4>Some values can be provided only because we keep our business small. <\/h4>\n<ul>\n<li class=\"question\">\u2500 Isn\u2019t it rare for a restaurant to employ only full-time staff?<\/li>\n<li class=\"answer\">I believe that for some reason it feels good when you can always walk into a shop and find someone that you know and can exchange a few words while buying coffee. By having a fixed staff, we can be aware of our customers\u2019 preferences. It also allows us to share our knowledge with other staff members.\n<p>Most of our employees have ambitions to start their own caf\u00e9 later in life or to gain the skills required to pour a good cup of coffee. That is why I sometimes have them devise a menu for special events or brainstorm about how we can make improvements or change.\n<\/li>\n<\/ul>\n<\/div>\n<div class=\"photobox2 clearFix\">\n<div class=\"photoleft\"><img decoding=\"async\" src=\"\/wp-content\/uploads\/Csr_27_06.jpg\" alt=\" \u4eca\u5e74\u306e\u793e\u54e1\u7814\u4fee\u306f\u30ce\u30eb\u30a6\u30a7\u30fc\u306e\u30aa\u30b9\u30ed\u30fc\u3092\u8a2a\u308c\u305f\u3002\u300c\u30db\u30b9\u30d4\u30bf\u30ea\u30c6\u30a3\u3084\u5e97\u306e\u96f0\u56f2\u6c17\u3001\u304a\u5ba2\u3055\u3093\u3068\u306e\u8ddd\u96e2\u611f\u306a\u3069\u3001\u300e\u3044\u3044\u306a\u300f\u3068\u611f\u3058\u308b\u3068\u3053\u308d\u304c\u793e\u54e1\u306e\u9593\u3067\u5171\u6709\u3067\u304d\u3066\u3044\u308b\u3053\u3068\u3092\u5b9f\u611f\u3057\u305f\u3093\u3067\u3059\u300d\" \/><\/p>\n<p class=\"note\"> This year, cafe 634 visited Oslo, Norway for employee training. <br class=\"pc\"> \u201cThe hospitality and atmosphere of each store, the distance between customers and stores\u2026<br class=\"pc\">I saw that our employees were inspired by the same values. <\/p>\n<\/div>\n<div class=\"photoright\"><img decoding=\"async\" src=\"\/wp-content\/uploads\/Csr_27_07.jpg\" \/>\n<\/div>\n<\/div>\n<div class=\"csrbox\">\n<ul>\n<li class=\"question\">\u2500 I have been told that you sometimes sell vegetables at your cafe. <\/li>\n<li class=\"answer\">The idea hit me when I was helping out on a farm during the one and a half months that the building was undergoing renovation. I learned that during the summer, many different vegetables come into season at once, so sometimes farmers end up discarding surplus produce. That made me want to sell summer vegetables at our caf\u00e9. <\/li>\n<li class=\"question\">\u2500 Besides that, you seem to be full of ideas, producing weekend breakfast menus, art exhibitions, jazz concerts, and other event throughout the year. What is the concept behind this? <\/li>\n<li class=\"answer\">It all originates in what we feel is \u201cgood\u201d and in our connections with people. The pictures that are on exhibit now are pictures drawn by autistic children and collectively photographed by Tomonori Nambu, videographers and photographer. I was moved by the colors of this picture and wanted to share it with more people so I asked Mr. Nambu myself.\n<p>I want to always be able to offer goods and space that we really feel good about. I believe that is cafe 634\u2019s identity.\n<\/li>\n<\/ul>\n<\/div>\n<div class=\"photobox2 clearFix\">\n<div class=\"photoleft\"><img decoding=\"async\" src=\"\/wp-content\/uploads\/Csr_27_08.jpg\" alt=\"\u30ca\u30f3\u30d6\u30c8\u30e2\u30ce\u30ea\u3055\u3093\u306b\u3088\u308b\u5c55\u793a\u300cRe:CREATION\u300d\u3002Caf\u00e9 634\u3067\u306f\u3001\u30e9\u30aa\u30b9\u6559\u80b2\u652f\u63f4\u6d3b\u52d5\u3092\u652f\u63f4\u3059\u308b\u3001\u793e\u4f1a\u7684\u306a\u30c6\u30fc\u30de\u306e\u4f01\u753b\u3082\u591a\u3044\" \/><\/p>\n<p class=\"note\"> Tomonori Nambu exhibition \u201cRe:CREATION\u201d <br class=\"pc\">Cafe 634 also produces many exhibitions with social themes, including some in support of educational aid in Laos. <\/p>\n<\/div>\n<\/div>\n<div class=\"csrbox clearFix\">\n<div class=\"csrboxleft\">\n<h4>Seeking to have people leave the cafe recharged<\/h4>\n<ul>\n<li class=\"question\">\u2500 What do you find attractive about Ginza? <\/li>\n<li class=\"answer\">This area in Higashi-ginza still values and observes traditional customs, such as the New Years\u2019 mochi (rice cake)-pounding event and seasonal festivals. Long-established Japanese confectionary shops offer the glutinous rice used to pound the mochi to put in zouni (rice cake soup) and the street becomes filled with people, from grandfathers and grandmothers to grandchildren. In that sense, the local community remains characterized by a Edokko (Tokyoite) mentality that generates a certain warmth. <\/li>\n<li class=\"question\">\u2500 Are there any dreams that you would like to pursue in the future? <\/li>\n<li class=\"answer\">To be truly honest, I find the current caf\u00e9 a little too big. As much as I enjoy working as a team, I wish for my staff to take their next step in life and launch their own business. And if I could make my dream come true, I would like to downsize and run a store where I can oversee everything.\n<p>Whether it\u2019s just for a cup of coffee or for lunch, everyone who stops by will hopefully leave with just a little more energy than they came with. That is the kind of caf\u00e9 that I aim to create. For that I am determined not to compromise what I feel is good. After graduating from university, Kodama worked as a junior high school social studies teacher before he took over the family printing business in Higashi-ginza. He renovated the printing factory in 2004 to open cafe 634, an oasis that serves healthy lunches until late in the afternoon. The name \u201c634,\u201d pronounced \u201cmusashi\u201d comes from \u201cMusashimaru,\u201d the nickname he was called by during high school because he resembled the sumo wrestler of the same name.
